A delightful twist on classic chocolate chip cookies, featuring the satisfying crunch of Rice Krispies.
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups Rice Krispies cereal
- 2 cups chocolate chips (semi-sweet or a mix of types)
Instructions
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the eggs and vanilla extract until well combined.
- In another bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
- Fold in the Rice Krispies and chocolate chips until evenly distributed.
- Chill the dough for at least 30 minutes if desired.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
