Description

A vibrant salad packed with fresh vegetables, tender chicken, and a rich, nutty peanut dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, chopped
  • 1 cup carrots, shredded
  • 1 cup cabbage, shredded
  • 1/2 cup scallions, sliced
  • 1/3 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 cup water
  • Salt and pepper to taste
  • Crushed peanuts for garnish
  • Sesame seeds for garnish (optional)


Instructions

  1. Cook or grill the chicken until cooked through, then allow to cool.
  2. Chop the bell peppers, carrots, cabbage, and scallions.
  3. In a food processor or bowl, combine peanut butter, soy sauce, lime juice, honey, and water. Blend or whisk until smooth.
  4. Toss together the chicken, vegetables, and peanut dressing in a large bowl.
  5. Garnish with crushed peanuts and sesame seeds before serving.

Notes

For added flavor, let the salad chill for 30 minutes before serving.
