A vibrant salad packed with fresh vegetables, tender chicken, and a rich, nutty peanut dressing.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup bell peppers, chopped
- 1 cup carrots, shredded
- 1 cup cabbage, shredded
- 1/2 cup scallions, sliced
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/4 cup water
- Salt and pepper to taste
- Crushed peanuts for garnish
- Sesame seeds for garnish (optional)
Instructions
- Cook or grill the chicken until cooked through, then allow to cool.
- Chop the bell peppers, carrots, cabbage, and scallions.
- In a food processor or bowl, combine peanut butter, soy sauce, lime juice, honey, and water. Blend or whisk until smooth.
- Toss together the chicken, vegetables, and peanut dressing in a large bowl.
- Garnish with crushed peanuts and sesame seeds before serving.
Notes
For added flavor, let the salad chill for 30 minutes before serving.
