Description

A refreshing and healthy cucumber salad that’s easy to prepare and full of flavor, perfect for a quick weeknight dinner.


Ingredients

  • 2 large Cucumbers (Peeled and sliced)
  • 1 cup Cherry Tomatoes (Halved)
  • 0.5 medium Red Onion (Thinly sliced)
  • 1 handful Fresh Parsley (Chopped)
  • 3 tablespoons Olive Oil (Extra virgin)
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Honey
  • to taste Salt
  • to taste Black Pepper (Freshly cracked)


Instructions

  1. Wash cucumbers, cherry tomatoes, and parsley under cold running water. Pat dry.
  2. Peel and slice cucumbers into thin rounds. Place them in a large mixing bowl.
  3. Halve cherry tomatoes and add them to the bowl with cucumbers.
  4. Thinly slice the red onion and add it to the mixing bowl.
  5. Chop fresh parsley and add it to the bowl.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
  7. Pour the dressing over the salad ingredients and toss gently to coat.
  8. Season with salt and freshly cracked black pepper to taste.
  9. Let the salad sit for 5 to 10 minutes to allow flavors to meld.
  10. Toss again before serving and enjoy!

Notes

Best eaten fresh, store leftovers in an airtight container in the refrigerator.
