Description
A refreshing and healthy cucumber salad that’s easy to prepare and full of flavor, perfect for a quick weeknight dinner.
Ingredients
- 2 large Cucumbers (Peeled and sliced)
 - 1 cup Cherry Tomatoes (Halved)
 - 0.5 medium Red Onion (Thinly sliced)
 - 1 handful Fresh Parsley (Chopped)
 - 3 tablespoons Olive Oil (Extra virgin)
 - 2 tablespoons Apple Cider Vinegar
 - 1 teaspoon Honey
 - to taste Salt
 - to taste Black Pepper (Freshly cracked)
 
Instructions
- Wash cucumbers, cherry tomatoes, and parsley under cold running water. Pat dry.
 - Peel and slice cucumbers into thin rounds. Place them in a large mixing bowl.
 - Halve cherry tomatoes and add them to the bowl with cucumbers.
 - Thinly slice the red onion and add it to the mixing bowl.
 - Chop fresh parsley and add it to the bowl.
 - In a small bowl, whisk together olive oil, apple cider vinegar, and honey until well combined.
 - Pour the dressing over the salad ingredients and toss gently to coat.
 - Season with salt and freshly cracked black pepper to taste.
 - Let the salad sit for 5 to 10 minutes to allow flavors to meld.
 - Toss again before serving and enjoy!

Best eaten fresh, store leftovers in an airtight container in the refrigerator.
