Description

A fun and quick recipe for homemade Mexican pizza that’s customizable for everyone’s taste.


Ingredients

  • 1 cup Vegetable Oil
  • 8 pieces Corn Tortillas
  • 1 lb Ground Beef
  • 1 tbsp Taco Seasoning
  • 1 cup Refried Beans
  • 1 cup Enchilada Sauce
  • 2 cups Cheddar Cheese
  • 1 cup Diced Tomato
  • 1/2 cup Sliced Black Olives
  • 1/4 cup Green Onion
  • to taste Hot Sauce
  • to taste Salt


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Fry the corn tortillas one or two at a time for about 1-2 minutes on each side until crispy. Drain on paper towels.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Mix in taco seasoning and refried beans until smooth.
  5. Preheat your oven to 400°F (200°C).
  6. Spread the beef and bean mixture on each fried tortilla.
  7. Pour enchilada sauce on top and sprinkle with cheddar cheese.
  8. Add diced tomatoes, sliced olives, and sprinkle green onions.
  9. Place pizzas on a baking tray and bake for about 10-12 minutes until the cheese is melted and bubbly.
  10. Let cool for a few minutes, then serve with hot sauce and salt to taste.

Notes

Customize your toppings based on family preferences. For a vegetarian option, skip the ground beef and use a variety of veggies.
