A fun and quick recipe for homemade Mexican pizza that’s customizable for everyone’s taste.
Ingredients
- 1 cup Vegetable Oil
- 8 pieces Corn Tortillas
- 1 lb Ground Beef
- 1 tbsp Taco Seasoning
- 1 cup Refried Beans
- 1 cup Enchilada Sauce
- 2 cups Cheddar Cheese
- 1 cup Diced Tomato
- 1/2 cup Sliced Black Olives
- 1/4 cup Green Onion
- to taste Hot Sauce
- to taste Salt
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the corn tortillas one or two at a time for about 1-2 minutes on each side until crispy. Drain on paper towels.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Mix in taco seasoning and refried beans until smooth.
- Preheat your oven to 400°F (200°C).
- Spread the beef and bean mixture on each fried tortilla.
- Pour enchilada sauce on top and sprinkle with cheddar cheese.
- Add diced tomatoes, sliced olives, and sprinkle green onions.
- Place pizzas on a baking tray and bake for about 10-12 minutes until the cheese is melted and bubbly.
- Let cool for a few minutes, then serve with hot sauce and salt to taste.
Notes
Customize your toppings based on family preferences. For a vegetarian option, skip the ground beef and use a variety of veggies.
