Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- ¼ cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a baking pan.
- In a separate bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla, mixing until just combined.
- Pour the cream cheese mixture over the crust and bake for 40 minutes, or until set but slightly jiggly in center.
- Combine sugar and cinnamon in a small bowl. Sprinkle over the baked cheesecake and return to oven for 5 more minutes.
- Allow the bars to cool completely, then chill in the refrigerator for at least 2 hours before slicing.
Notes
For best results, pack the crust firmly and chill the bars before cutting for clean edges.
