Ingredients
- 8 oz Cream Cheese (Softened, preferably full-fat)
- 1 cup Almond Flour (Can substitute with sunflower seed flour)
- 2 tbsp Coconut Flour (Add carefully to avoid dryness)
- 1 large Egg (Used as a binder)
- 1 tsp Vanilla Extract (Can substitute with almond extract)
- 1 tsp Baking Powder
- 1/4 tsp Salt (Just a pinch)
- 1 tbsp Ground Cinnamon (Optional: add nutmeg for extra flavor)
- 1/4 cup Erythritol (Keto-friendly sweetener)
- 2 tbsp Melted Butter
- 2 tbsp Cooking Spray or Butter (To grease the pan)
Instructions
- Preheat your oven to 350°F (180°C). Grease a baking pan with cooking spray or butter.
- In a mixing bowl, combine the softened cream cheese, almond flour, coconut flour, egg, vanilla extract, baking powder, and salt. Mix well until you have a smooth batter.
- Add the ground cinnamon and erythritol. Stir again to combine.
- Spread the batter evenly in the greased baking pan.
- Bake in the preheated oven for 15-20 minutes or until the edges are slightly golden.
- Remove from the oven and let it cool for a few minutes.
- Once cooled, cut the baked mixture into strips and roll them up. If desired, brush with melted butter before serving.
Notes
Serve warm with extra cinnamon or keto-friendly icing. Store leftovers in an airtight container in the refrigerator for 3-5 days.
