Description

A delicious keto-friendly dessert that satisfies your sweet tooth with classic cinnamon flavor without the carbs.


Ingredients

  • 8 oz Cream Cheese (Softened, preferably full-fat)
  • 1 cup Almond Flour (Can substitute with sunflower seed flour)
  • 2 tbsp Coconut Flour (Add carefully to avoid dryness)
  • 1 large Egg (Used as a binder)
  • 1 tsp Vanilla Extract (Can substitute with almond extract)
  • 1 tsp Baking Powder
  • 1/4 tsp Salt (Just a pinch)
  • 1 tbsp Ground Cinnamon (Optional: add nutmeg for extra flavor)
  • 1/4 cup Erythritol (Keto-friendly sweetener)
  • 2 tbsp Melted Butter
  • 2 tbsp Cooking Spray or Butter (To grease the pan)


Instructions

  1. Preheat your oven to 350°F (180°C). Grease a baking pan with cooking spray or butter.
  2. In a mixing bowl, combine the softened cream cheese, almond flour, coconut flour, egg, vanilla extract, baking powder, and salt. Mix well until you have a smooth batter.
  3. Add the ground cinnamon and erythritol. Stir again to combine.
  4. Spread the batter evenly in the greased baking pan.
  5. Bake in the preheated oven for 15-20 minutes or until the edges are slightly golden.
  6. Remove from the oven and let it cool for a few minutes.
  7. Once cooled, cut the baked mixture into strips and roll them up. If desired, brush with melted butter before serving.

Notes

Serve warm with extra cinnamon or keto-friendly icing. Store leftovers in an airtight container in the refrigerator for 3-5 days.
