A delightful treat that combines rich cheesecake flavors with juicy strawberries, all wrapped in crispy, golden-brown bread. Perfect for breakfast, snacks, or dessert.
Ingredients
- 8 oz Cream Cheese (or mascarpone for lighter texture)
- 1/2 cup Powdered Sugar
- 1 cup Sliced Strawberries (or raspberries/peaches)
- 1/4 cup Strawberry Jam (or any fruit jam)
- 4 slices Bread (thick slices like brioche or Texas toast)
- 2 large Eggs (or flaxseed egg for egg-free option)
- 1/4 cup Milk (dairy-free substitutes work well)
- 4 tbsp Butter (or coconut oil)
Instructions
- In a bowl, mix the cream cheese and powdered sugar until smooth. Stir in the sliced strawberries and strawberry jam. Set aside.
- Take two slices of bread, spread cheesecake mixture on one side, and top with another slice to create a sandwich. Repeat for all sandwiches.
- In a shallow bowl, whisk together eggs and milk. Dip each sandwich in the egg mixture, soaking both sides.
- Melt butter in a skillet over medium heat. Once hot, place sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes, then flip and cook the other side.
- Remove from skillet and let cool slightly before serving.
Notes
Dust warm sandwiches with powdered sugar and serve with honey or extra strawberry jam. Pair with coffee or milk. Store leftovers in an airtight container for up to 2 days.
