A tasty twist on a Greek classic, these air fryer spanakopita rolls feature crispy phyllo dough filled with savory spinach and feta, making them perfect as an appetizer or snack.
Ingredients
- 1 package phyllo dough
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon melted butter
- Salt and pepper to taste
- Fresh herbs (dill or parsley) optional
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, mix the sautéed spinach, feta cheese, salt, pepper, and any optional herbs.
- Lay out a sheet of phyllo dough and brush it with melted butter. Layer another sheet on top and brush again.
- Spoon the filling onto one end of the layered phyllo and roll it up tightly.
- Place the rolled spanakopita in the air fryer basket and cook for 15 minutes or until golden brown and crispy.
- Serve warm with tzatziki or tomato salsa.
Notes
Keep phyllo dough covered with a damp cloth to avoid drying out. For variations, consider gluten-free dough or adding protein like chicken.
