Description

A tasty twist on a Greek classic, these air fryer spanakopita rolls feature crispy phyllo dough filled with savory spinach and feta, making them perfect as an appetizer or snack.


Ingredients

  • 1 package phyllo dough
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter
  • Salt and pepper to taste
  • Fresh herbs (dill or parsley) optional


Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, mix the sautéed spinach, feta cheese, salt, pepper, and any optional herbs.
  5. Lay out a sheet of phyllo dough and brush it with melted butter. Layer another sheet on top and brush again.
  6. Spoon the filling onto one end of the layered phyllo and roll it up tightly.
  7. Place the rolled spanakopita in the air fryer basket and cook for 15 minutes or until golden brown and crispy.
  8. Serve warm with tzatziki or tomato salsa.

Notes

Keep phyllo dough covered with a damp cloth to avoid drying out. For variations, consider gluten-free dough or adding protein like chicken.
