Description

Baked cod enveloped in a rich coconut lemon cream sauce, perfect for any weeknight dinner or special occasion.


Ingredients

  • 4 cod fillets
  • 1 can coconut milk
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Steamed jasmine rice or quinoa, for serving
  • Fresh herbs (cilantro or parsley), for garnish
  • Optional: Red pepper flakes or sriracha for a spicy twist


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper and place them in a baking dish.
  3. In a bowl, combine coconut milk, lemon juice and zest, minced garlic, and any additional seasonings.
  4. Pour the coconut lemon cream sauce over the cod.
  5. Bake for 20 minutes or until the cod is flaky.
  6. Serve the cod on a bed of jasmine rice or quinoa, drizzled with the sauce, and garnish with fresh herbs.

Notes

To ensure even cooking, use a good quality baking dish. Adjust sauce thickness by adding more coconut milk if too thick.
