Description
Baked cod enveloped in a rich coconut lemon cream sauce, perfect for any weeknight dinner or special occasion.
Ingredients
- 4 cod fillets
- 1 can coconut milk
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Steamed jasmine rice or quinoa, for serving
- Fresh herbs (cilantro or parsley), for garnish
- Optional: Red pepper flakes or sriracha for a spicy twist
Instructions
- Preheat the oven to 400°F (200°C).
- Season the cod fillets with salt and pepper and place them in a baking dish.
- In a bowl, combine coconut milk, lemon juice and zest, minced garlic, and any additional seasonings.
- Pour the coconut lemon cream sauce over the cod.
- Bake for 20 minutes or until the cod is flaky.
- Serve the cod on a bed of jasmine rice or quinoa, drizzled with the sauce, and garnish with fresh herbs.
Notes
To ensure even cooking, use a good quality baking dish. Adjust sauce thickness by adding more coconut milk if too thick.
