Description

A healthier take on traditional meatloaf using lean ground bison, topped with a tangy glaze.


Ingredients

  • 1 pound Ground Bison
  • 1 cup Breadcrumbs
  • 1/2 cup Beef Broth
  • 1 large Egg (beaten)
  • 1 medium Grated Onion
  • 1/2 cup Shredded Parmesan
  • 1/4 cup Tomato Paste
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Table Salt
  • 1 teaspoon Paprika
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Ground Sage
  • 1/2 cup Ketchup
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons Brown Sugar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the ground bison with breadcrumbs, beef broth, beaten egg, grated onion, shredded Parmesan, tomato paste, Worcestershire sauce, salt, paprika, black pepper, and ground sage. Combine everything well.
  3. Shape the mixture into a loaf and place it in a baking dish or on a lined baking sheet.
  4. In a separate bowl, mix ketchup, balsamic vinegar, and brown sugar for the glaze.
  5. Pour the glaze over the meatloaf.
  6. Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
  7. Allow it to rest for a few minutes before slicing.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Customize seasonings to your taste.
