A healthier take on traditional meatloaf using lean ground bison, topped with a tangy glaze.
Ingredients
- 1 pound Ground Bison
- 1 cup Breadcrumbs
- 1/2 cup Beef Broth
- 1 large Egg (beaten)
- 1 medium Grated Onion
- 1/2 cup Shredded Parmesan
- 1/4 cup Tomato Paste
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon Table Salt
- 1 teaspoon Paprika
- 1/2 teaspoon Black Pepper
- 1 teaspoon Ground Sage
- 1/2 cup Ketchup
- 2 tablespoons Balsamic Vinegar
- 2 tablespoons Brown Sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the ground bison with breadcrumbs, beef broth, beaten egg, grated onion, shredded Parmesan, tomato paste, Worcestershire sauce, salt, paprika, black pepper, and ground sage. Combine everything well.
- Shape the mixture into a loaf and place it in a baking dish or on a lined baking sheet.
- In a separate bowl, mix ketchup, balsamic vinegar, and brown sugar for the glaze.
- Pour the glaze over the meatloaf.
- Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
- Allow it to rest for a few minutes before slicing.
Notes
Store any leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Customize seasonings to your taste.
