Description

A stunning Filipino meringue roll filled with creamy custard, perfect for any celebration.


Ingredients

  • 8 large egg whites
  • 1 cup granulated sugar
  • 4 large egg yolks
  • 2 cups milk
  • 1/2 cup granulated sugar (for custard)
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Whip egg whites in a clean bowl until stiff peaks form.
  3. Gradually fold in sugar until glossy and smooth.
  4. Spread the meringue on a parchment-lined baking sheet and bake for 25 minutes.
  5. Meanwhile, prepare the custard: Cook egg yolks, milk, and sugar in a saucepan until thickened.
  6. Once the meringue is baked, allow it to cool slightly.
  7. Spread the custard over the meringue and roll it gently from one end to the other.
  8. Chill in the refrigerator before slicing and serving.

Notes

Best served chilled. Garnish with fresh fruits or dust with powdered sugar for an elegant finish.
