A stunning Filipino meringue roll filled with creamy custard, perfect for any celebration.
Ingredients
- 8 large egg whites
- 1 cup granulated sugar
- 4 large egg yolks
- 2 cups milk
- 1/2 cup granulated sugar (for custard)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- Whip egg whites in a clean bowl until stiff peaks form.
- Gradually fold in sugar until glossy and smooth.
- Spread the meringue on a parchment-lined baking sheet and bake for 25 minutes.
- Meanwhile, prepare the custard: Cook egg yolks, milk, and sugar in a saucepan until thickened.
- Once the meringue is baked, allow it to cool slightly.
- Spread the custard over the meringue and roll it gently from one end to the other.
- Chill in the refrigerator before slicing and serving.
Notes
Best served chilled. Garnish with fresh fruits or dust with powdered sugar for an elegant finish.
