Description

Sizzling golden brown potatoes sautéed with vibrant spices and fresh veggies for a hearty breakfast.


Ingredients

  • 4 medium Yukon Gold or Red potatoes, diced
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • Pepper, to taste
  • Cilantro, for garnish


Instructions

  1. Wash and dice the potatoes into small cubes.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add potatoes to the skillet and let them cook undisturbed for a few minutes until crispy.
  4. Stir in bell peppers, onions, cumin, chili powder, salt, and pepper.
  5. Continue cooking for about 20 minutes or until the potatoes are golden and veggies are tender.
  6. Garnish with cilantro and serve.

Notes

For a complete meal, serve with sunny-side-up or scrambled eggs on top and garnish with avocado or salsa.
