Description

Delicious and wholesome muffins combining the sweetness of ripe bananas with the earthiness of carrots.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. In one bowl, mash the ripe bananas.
  3. In another bowl, grate the fresh carrots.
  4. Combine the wet ingredients: bananas, eggs, and melted butter.
  5. In a separate bowl, mix the dry ingredients: flour, sugar, baking powder, cinnamon, and salt.
  6. Gently fold the wet ingredients into the dry mix until just combined, being careful not to overmix.
  7. Pour the batter into the muffin tins, filling them about 2/3 full.
  8. Bake for 25 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Allow to cool slightly before removing from the tin.

Notes

Store leftover muffins in an airtight container for up to three days, or freeze for up to three months.
