Description
Crispy on the outside, soft on the inside, these Colombian stuffed potatoes are filled with seasoned ground beef and are perfect as a snack or meal.
Ingredients
- 2 pounds Potatoes (Starchy varieties like Russet or Yukon Gold preferred)
- 1 teaspoon Salt (Adjust to taste)
- 4 cups Water (For boiling the potatoes)
- 1 pound Ground Beef (Seasoned well)
- 2 whole Scallions (Can substitute with green onions)
- 2 whole Tomatoes (Campari or Roma preferred)
- 1 teaspoon Ground Cumin
- 1 packet Sazon (For enhancing flavor)
- 1 cup Flour (Adjust for gluten-free options)
- 1 cup Heavy Cream
- 2 whole Eggs
- 1 cup Panko Crumbs (Optional for extra crunch)
- 1 tablespoon Fresh Parsley (For garnish)
Instructions
- Peel and cut the potatoes into quarters. Boil them in salted water until soft, roughly 20 minutes.
- Drain the potatoes and mash them until smooth. Let them cool slightly.
- Cook ground beef over medium heat until browned. Add chopped scallions, diced tomatoes, ground cumin, and Sazon. Stir well and cook for a few minutes. Remove from heat.
- Take a portion of the mashed potato, flatten it, and place a spoonful of beef mixture in the center. Enclose the beef with the potato, forming a ball. Repeat until used.
- Combine flour, heavy cream, and eggs to create a batter for coating.
- Dip each potato round into the batter, then roll in panko crumbs if desired.
- Heat oil in a deep pan and fry the potato balls until golden brown on all sides. Drain on paper towels.
- Serve with fresh parsley on top.
