Description

Coyotas from Sonora are traditional Mexican pastries filled with a delightful mixture of brown sugar and cinnamon, perfect for snacks or desserts.


Ingredients

  • 500 g All-purpose flour
  • 100 g Sugar
  • 1 tsp Baking powder
  • 100 g Butter (melted)
  • 1 large Egg
  • 100 ml Milk
  • 200 g Brown sugar
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract


Instructions

  1. In a large bowl, mix the all-purpose flour, sugar, and baking powder.
  2. Add the melted butter, egg, and milk to the dry ingredients. Mix well until a soft dough forms.
  3. In a separate bowl, combine the brown sugar, cinnamon, and vanilla extract to make the filling.
  4. Preheat your oven to 175°C (350°F).
  5. Take a small portion of dough and flatten it in your hand. Place a spoonful of the filling in the center.
  6. Fold the dough over the filling and pinch the edges to seal it well.
  7. Repeat with the remaining dough and filling.
  8. Place the filled coyotas on a baking sheet lined with parchment paper.
  9. Bake for about 15-20 minutes or until they turn golden brown.
  10. Remove from the oven and let them cool before serving.

Notes

Coyotas are best enjoyed warm or at room temperature. Serve them plain or dusted with powdered sugar.
