Description

A bright, retro-holiday side that balances sweet and tart flavors, perfect for festive gatherings.


Ingredients

  • 1 (3-ounce) package of cranberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (14-ounce) can of whole cranberry sauce
  • 8 ounces drained crushed pineapple
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts or pecans (optional)
  • For cream cheese topping: 8 ounces softened cream cheese
  • 1/3 cup powdered sugar
  • 1/2 cup whipped cream


Instructions

  1. Dissolve gelatin in boiling water and stir in cold water.
  2. Fold in cranberry sauce, crushed pineapple, mini marshmallows, and chopped nuts if using.
  3. Pour mixture into a loaf pan or mold and refrigerate for at least 4 hours until set.
  4. For the cream cheese topping, beat softened cream cheese and powdered sugar, then fold in whipped cream.
  5. Spread the topping over the set salad before serving.
