Ingredients
- 1 (3-ounce) package of cranberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 (14-ounce) can of whole cranberry sauce
- 8 ounces drained crushed pineapple
- 1 cup mini marshmallows
- 1/2 cup chopped walnuts or pecans (optional)
- For cream cheese topping: 8 ounces softened cream cheese
- 1/3 cup powdered sugar
- 1/2 cup whipped cream
Instructions
- Dissolve gelatin in boiling water and stir in cold water.
- Fold in cranberry sauce, crushed pineapple, mini marshmallows, and chopped nuts if using.
- Pour mixture into a loaf pan or mold and refrigerate for at least 4 hours until set.
- For the cream cheese topping, beat softened cream cheese and powdered sugar, then fold in whipped cream.
- Spread the topping over the set salad before serving.
