Description
A vibrant Filipino layered rice cake that combines rice flour, coconut milk, and natural flavorings for a festive treat.
Ingredients
- 2 cups rice flour
- 1 cup coconut milk
- 1 cup sugar
- 1/2 cup water
- Purple food coloring or ube flavoring
- Yellow food coloring or pandan extract
- Grated coconut for garnish
Instructions
- Prepare three distinct layers: purple, yellow, and white, by mixing rice flour, coconut milk, sugar, and water in separate bowls.
- Add food coloring or flavoring to each mixture as desired.
- Grease shallow round pans and pour the purple layer into the first pan.
- Steam the first layer for about 15 minutes or until set.
- Once set, repeat the process for the yellow and white layers, steaming each one for 15 minutes.
- Allow each layer to cool slightly before stacking them together.
- Serve sliced and garnished with grated coconut.
Notes
For the best flavor, use fresh coconut milk and ensure even steam distribution.
