Description

A vibrant Filipino layered rice cake that combines rice flour, coconut milk, and natural flavorings for a festive treat.


Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 cup sugar
  • 1/2 cup water
  • Purple food coloring or ube flavoring
  • Yellow food coloring or pandan extract
  • Grated coconut for garnish


Instructions

  1. Prepare three distinct layers: purple, yellow, and white, by mixing rice flour, coconut milk, sugar, and water in separate bowls.
  2. Add food coloring or flavoring to each mixture as desired.
  3. Grease shallow round pans and pour the purple layer into the first pan.
  4. Steam the first layer for about 15 minutes or until set.
  5. Once set, repeat the process for the yellow and white layers, steaming each one for 15 minutes.
  6. Allow each layer to cool slightly before stacking them together.
  7. Serve sliced and garnished with grated coconut.

Notes

For the best flavor, use fresh coconut milk and ensure even steam distribution.
