A quick and flavorful weeknight dinner featuring ground turkey, sticky rice, fresh veggies, and a creamy bang bang sauce.
Ingredients
- 1 cup uncooked jasmine rice
- 1 1/2 cups water
- 1 tablespoon neutral oil
- 1 lb ground turkey
- 1 small onion, diced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 tablespoon soy sauce
- 1/3 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon rice vinegar
- Squeeze of lime
- Sliced scallions, for garnish
- Cucumber, for garnish
- Cilantro, for garnish
- Lime wedges, for garnish
Instructions
- Cook jasmine rice with water and a pinch of salt; bring to a boil, then simmer covered for 12–15 minutes until tender.
- In a skillet, heat oil over medium-high heat and add ground turkey and diced onion; cook for 6–8 minutes until browned.
- Season turkey with salt, pepper, smoked paprika, and soy sauce; cook until the internal temperature reaches 165°F.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, rice vinegar, and lime juice to make bang bang sauce.
- Assemble bowls by spooning rice, adding turkey, drizzling with sauce, and topping with garnishes.
Notes
Store cooked components separately in the fridge for 3–4 days or freeze for longer storage. Use egg-free mayo for a dairy-free version.
