Ingredients
- 4 boneless chicken breasts
- 2 tablespoons jerk seasoning
- Juice of 1 lime
- 2 cloves garlic, minced
- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 teaspoon salt
- 2 ripe mangoes, diced
- 1/4 cup red onion, diced (optional)
- Fresh cilantro for garnish
Instructions
- Marinate the chicken in jerk seasoning, lime juice, and garlic for at least 30 minutes.
