Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons jerk seasoning
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 teaspoon salt
  • 2 ripe mangoes, diced
  • 1/4 cup red onion, diced (optional)
  • Fresh cilantro for garnish


Instructions

  1. Marinate the chicken in jerk seasoning, lime juice, and garlic for at least 30 minutes.
