Description
A refreshing and easy-to-make no bake cheesecake featuring tangy passion fruit and a creamy filling.
Ingredients
- 1 cup Vegan Cream Cheese
- 1 cup Vegan Greek-style Yogurt (or vegan sour cream)
- 1 cup Cashews (soaked for at least 4 hours)
- 1 teaspoon Vanilla Extract
- 1 cup Vegan Passion Fruit Curd (prepared ahead of time)
- 1 cup Vegan Cookies (e.g., Biscoff) (crushed)
- 1/2 cup Unsalted Vegan Butter (melted)
- 1/4 teaspoon Sea Salt
- 1/2 cup Additional Passion Fruit Curd (heated to spread)
- 2 tablespoons Fresh Passion Fruit Seeds (for garnish)
- a few Mint Leaves (for garnish)
Instructions
- Soak the cashews in water for at least 4 hours, then drain and rinse.
- Blend soaked cashews, vegan cream cheese, vegan Greek-style yogurt, vanilla extract, and 1 cup of vegan passion fruit curd until smooth.
- In a separate bowl, mix crushed vegan cookies with melted vegan butter and sea salt. Press into the bottom of a springform pan to form a crust.
- Pour the creamy filling over the crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or overnight, until set.
- Heat additional passion fruit curd until spreadable and spread on top of the cheesecake.
- Garnish with fresh passion fruit seeds and mint leaves.
Notes
For best results, refrigerate overnight. You can swap passion fruit for other fruit curds like mango or lemon.
