Description

A vibrant and hearty breakfast dish featuring eggs poached in a spiced tomato sauce, perfect for two.


Ingredients

  • 2 tbsp Olive Oil
  • 2 cloves Minced Garlic
  • 0.5 medium Yellow Onion, diced
  • 0.5 medium Red Bell Pepper, diced
  • 1.5 tsp Paprika
  • 1.5 tsp Crushed Red Pepper Flakes
  • 0.5 tsp Cumin
  • 0.5 tsp Ground Coriander
  • 0.25 tsp Salt
  • 14 oz Canned Crushed Tomatoes
  • 3 large Eggs
  • Salt & Pepper to taste
  • Goat Cheese, crumbled
  • Cilantro, chopped
  • 4 slices Bakery Bread


Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion. Sauté until the onion is translucent.
  2. Add the diced red bell pepper and cook for a few more minutes until softened.
  3. Stir in the paprika, crushed red pepper flakes, cumin, ground coriander, and salt. Cook for about 1 minute until fragrant.
  4. Pour in the canned crushed tomatoes. Let the mixture simmer for about 10 minutes, stirring occasionally until it thickens slightly.
  5. Make three wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs reach your desired doneness.
  6. Remove from heat and sprinkle crumbled goat cheese and chopped cilantro on top. Season with salt and pepper to taste.

Notes

Serve hot with bakery bread or pita for dipping into the sauce.
