Description

A quick and delicious stir-fried dish that combines the vibrant flavors of shrimp, fresh asparagus, and mushrooms, perfect for busy weeknights.


Ingredients

  • 8 oz shrimp, peeled and deveined
  • 1 cup asparagus, cut into 2-inch pieces
  • 1 cup mushrooms, sliced
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp oil (for frying)
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Steamed jasmine rice or quinoa, for serving


Instructions

  1. Marinate the shrimp in soy sauce and garlic for flavor.
  2. Heat a skillet over medium-high heat and add oil.
  3. Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.
  4. Remove shrimp and add asparagus and mushrooms, cooking until tender-crisp.
  5. Return shrimp to the skillet and add sesame oil, stirring to combine.
  6. Serve over steamed rice or quinoa.

Notes

Serve with a sprinkle of sesame seeds and chopped green onions for extra flavor.
