A quick and delicious stir-fried dish that combines the vibrant flavors of shrimp, fresh asparagus, and mushrooms, perfect for busy weeknights.
Ingredients
- 8 oz shrimp, peeled and deveined
- 1 cup asparagus, cut into 2-inch pieces
- 1 cup mushrooms, sliced
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp oil (for frying)
- 1 tsp sesame oil
- Salt and pepper to taste
- Steamed jasmine rice or quinoa, for serving
Instructions
- Marinate the shrimp in soy sauce and garlic for flavor.
- Heat a skillet over medium-high heat and add oil.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.
- Remove shrimp and add asparagus and mushrooms, cooking until tender-crisp.
- Return shrimp to the skillet and add sesame oil, stirring to combine.
- Serve over steamed rice or quinoa.
Notes
Serve with a sprinkle of sesame seeds and chopped green onions for extra flavor.
