Description

A comforting and savory white chicken chili that balances creaminess with freshness, loaded with chicken and white beans.


Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1–2 tablespoons oil
  • 1–2 teaspoons ground cumin
  • 1 teaspoon oregano
  • Pinch of cayenne pepper
  • 3 cups low-sodium chicken broth
  • 2 cans (15 oz each) white beans, drained
  • 1 can (4 oz) diced green chiles
  • 1–1.5 lbs cooked shredded chicken
  • 1/2 cup sour cream or crema
  • Juice of 1 lime


Instructions

  1. Sauté onion and garlic in oil over medium heat until softened, about 4–5 minutes.
  2. Add cumin, oregano, and cayenne; toast for 30 seconds.
  3. Stir in chicken broth, white beans, green chiles, and shredded chicken.
  4. Simmer gently for 20–25 minutes.
  5. Finish with sour cream and lime juice.

Notes

For added creaminess, you can blend part of the beans and stir back into the chili.
