A comforting and savory white chicken chili that balances creaminess with freshness, loaded with chicken and white beans.
Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1–2 tablespoons oil
- 1–2 teaspoons ground cumin
- 1 teaspoon oregano
- Pinch of cayenne pepper
- 3 cups low-sodium chicken broth
- 2 cans (15 oz each) white beans, drained
- 1 can (4 oz) diced green chiles
- 1–1.5 lbs cooked shredded chicken
- 1/2 cup sour cream or crema
- Juice of 1 lime
Instructions
- Sauté onion and garlic in oil over medium heat until softened, about 4–5 minutes.
- Add cumin, oregano, and cayenne; toast for 30 seconds.
- Stir in chicken broth, white beans, green chiles, and shredded chicken.
- Simmer gently for 20–25 minutes.
- Finish with sour cream and lime juice.
Notes
For added creaminess, you can blend part of the beans and stir back into the chili.
