Ingredients
- 8 oz elbow macaroni
- 2 cups shredded rotisserie chicken
- 1 cup BBQ sauce (hickory or sweet)
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup whole milk
- 2 tablespoons unsalted butter
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Boil the elbow macaroni according to the package instructions, but remove from heat while it’s still slightly chewy.
- In a pan, melt butter over medium heat, then add shredded chicken and BBQ sauce, allowing to bubble gently.
- Lower the heat and add cheese gradually, along with a splash of milk, stirring until creamy and smooth.
- Fold in the cooked pasta until evenly coated.
- Adjust seasoning with salt, pepper, and more cheese if desired.
- Serve in bowls, drizzled with extra BBQ sauce or garnished with green onions if preferred.
Notes
Feel free to customize by adding vegetables or different proteins. Garnish with breadcrumbs or fried onions for added crunch.
