Ingredients
- 8 oz elbow macaroni
- 2 cups shredded cooked chicken (rotisserie or grilled)
- 1 cup BBQ sauce
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup whole milk
- 2 tbsp butter
- Salt, to taste
- Pepper, to taste
- 1/2 tsp smoked paprika (optional)
Instructions
- Boil the elbow macaroni according to the package instructions, but remove from heat while still slightly chewy.
- Melt the butter in a pan over medium heat, add the shredded chicken, and pour in the BBQ sauce. Let it bubble gently to infuse the chicken with flavor.
- Lower the heat and gradually add the cheddar cheese, stirring in a splash of milk as it melts to create a smooth sauce.
- Fold in the cooked pasta until it is well-coated and glossy.
- Taste and add salt, pepper, and more cheese if desired.
- Divide into bowls and top with extra BBQ sauce or green onions as desired.
Notes
For a crunchy topping, add crispy fried onions or buttery breadcrumbs before serving.
