Description

A delightful and easy-to-make honey-glazed corn casserole that adds warmth and flavor to any meal.


Ingredients

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • 2 large eggs
  • 1/4 cup honey (plus more for glazing)
  • 1/2 cup melted butter
  • 1 box (8.5 oz) cornbread mix
  • Optional: pinch of cinnamon or cayenne; shredded cheddar for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8×8 or 9×9-inch baking dish.
  2. In a large bowl, whisk together the eggs, sour cream, melted butter, and honey until smooth.
  3. Stir in the whole kernel corn, creamed corn, and cornbread mix until fully combined. Add optional spices or cheese if desired.
  4. Spread the batter evenly in the greased dish and bake for 45–55 minutes, or until golden and a toothpick inserted comes out clean.
  5. Let the casserole rest for 5–10 minutes, then drizzle with extra honey and slice into squares to serve warm.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for about 3 months. Customize with spices or different toppings as desired.
