A delightful and easy-to-make honey-glazed corn casserole that adds warmth and flavor to any meal.
Ingredients
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1 cup sour cream
- 2 large eggs
- 1/4 cup honey (plus more for glazing)
- 1/2 cup melted butter
- 1 box (8.5 oz) cornbread mix
- Optional: pinch of cinnamon or cayenne; shredded cheddar for topping
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease an 8×8 or 9×9-inch baking dish.
- In a large bowl, whisk together the eggs, sour cream, melted butter, and honey until smooth.
- Stir in the whole kernel corn, creamed corn, and cornbread mix until fully combined. Add optional spices or cheese if desired.
- Spread the batter evenly in the greased dish and bake for 45–55 minutes, or until golden and a toothpick inserted comes out clean.
- Let the casserole rest for 5–10 minutes, then drizzle with extra honey and slice into squares to serve warm.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for about 3 months. Customize with spices or different toppings as desired.
