Ingredients

  • 2 chicken breasts (or thighs)
  • 1 pack of penne or favorite short pasta
  • Cajun seasoning to taste
  • 1-2 bell peppers (colorful is best)
  • 1/2 small red onion, sliced thin
  • 2-3 garlic cloves, smashed
  • 1 cup heavy cream
  • About 2 cups chicken broth
  • A handful of parmesan (optional)
  • Olive oil, salt, and pepper to taste


Instructions

  1. Season chicken with Cajun spices and cook in a hot pan with olive oil until browned.
  2. Add sliced bell peppers and onions to the pan, cooking until slightly colored.
  3. Incorporate the pasta, chicken broth, and heavy cream into the skillet.
  4. Simmer until pasta is cooked and the sauce thickens.
  5. Toss in the cooked chicken and parmesan before serving.

Notes

Let your chicken rest before slicing to retain juices. A squeeze of lemon at the end enhances the flavor. Leftovers can be reheated with a splash of broth or milk.
