Ingredients
- 2 chicken breasts (or thighs)
- 1 pack of penne or favorite short pasta
- Cajun seasoning to taste
- 1-2 bell peppers (colorful is best)
- 1/2 small red onion, sliced thin
- 2-3 garlic cloves, smashed
- 1 cup heavy cream
- About 2 cups chicken broth
- A handful of parmesan (optional)
- Olive oil, salt, and pepper to taste
Instructions
- Season chicken with Cajun spices and cook in a hot pan with olive oil until browned.
- Add sliced bell peppers and onions to the pan, cooking until slightly colored.
- Incorporate the pasta, chicken broth, and heavy cream into the skillet.
- Simmer until pasta is cooked and the sauce thickens.
- Toss in the cooked chicken and parmesan before serving.
Notes
Let your chicken rest before slicing to retain juices. A squeeze of lemon at the end enhances the flavor. Leftovers can be reheated with a splash of broth or milk.
