Description
A creamy and slightly spicy pasta dish with Cajun flavors that is perfect for a weeknight dinner.
Ingredients
- 2 chicken breasts (or thighs for juiciness)
- 1 pack of penne or your favorite short pasta
- Cajun seasoning (to taste)
- 1-2 bell peppers (colorful)
- 1/2 small red onion, sliced thin
- 2-3 garlic cloves, smashed
- 1 cup heavy cream
- 2 cups chicken broth
- A handful of parmesan cheese (optional)
- Olive oil, salt, and pepper
Instructions
- Slice chicken and season with Cajun spices. Heat a pan with olive oil and brown the chicken on medium heat.
- Add sliced bell peppers and onion to the pan and sauté until they get some color.
- Add pasta, chicken broth, and cream to the pan; stir and simmer until pasta is cooked and sauce thickens.
- Fold in the cooked chicken and top with parmesan if desired before serving.
Notes
Try adding a squeeze of lemon at the end for brightness; leftovers can be reheated with a splash of broth or milk.
