Description

A creamy and slightly spicy pasta dish with Cajun flavors that is perfect for a weeknight dinner.


Ingredients

  • 2 chicken breasts (or thighs for juiciness)
  • 1 pack of penne or your favorite short pasta
  • Cajun seasoning (to taste)
  • 1-2 bell peppers (colorful)
  • 1/2 small red onion, sliced thin
  • 2-3 garlic cloves, smashed
  • 1 cup heavy cream
  • 2 cups chicken broth
  • A handful of parmesan cheese (optional)
  • Olive oil, salt, and pepper


Instructions

  1. Slice chicken and season with Cajun spices. Heat a pan with olive oil and brown the chicken on medium heat.
  2. Add sliced bell peppers and onion to the pan and sauté until they get some color.
  3. Add pasta, chicken broth, and cream to the pan; stir and simmer until pasta is cooked and sauce thickens.
  4. Fold in the cooked chicken and top with parmesan if desired before serving.

Notes

Try adding a squeeze of lemon at the end for brightness; leftovers can be reheated with a splash of broth or milk.
