Description

A comforting and nutritious soup filled with ground beef and a variety of vegetables, perfect for chilly days.


Ingredients

  • 1 pound lean ground beef
  • 4 cups water
  • 1 (28-ounce) can diced tomatoes (with juice)
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped green beans (fresh or frozen)
  • 1 cup chopped celery
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 bay leaf
  • Optional: 1 cup spinach or kale
  • Optional: 1 teaspoon Italian seasoning


Instructions

  1. In a large pot over medium-high heat, cook the ground beef until browned. Drain excess grease.
  2. Stir in the onion, carrots, celery, and green beans. Cook for about 5–7 minutes until slightly softened.
  3. Pour in the diced tomatoes with juice and water. Add salt, pepper, garlic powder, and bay leaf. Stir well.
  4. Bring the mixture to a boil, then reduce the heat. Let it simmer for 30–40 minutes, stirring occasionally.
  5. If using, stir in the spinach or kale during the last 5 minutes of cooking.
  6. Remove the bay leaf. Adjust seasoning if needed and serve hot with bread or salad.

Notes

Use fresh vegetables for better flavor. This soup can be made in a slow cooker for convenience.
