Description
A comforting and nutritious soup filled with ground beef and a variety of vegetables, perfect for chilly days.
Ingredients
- 1 pound lean ground beef
 - 4 cups water
 - 1 (28-ounce) can diced tomatoes (with juice)
 - 1 cup chopped onion
 - 1 cup chopped carrots
 - 1 cup chopped green beans (fresh or frozen)
 - 1 cup chopped celery
 - 1 teaspoon salt
 - 1/4 teaspoon ground black pepper
 - 1/4 teaspoon garlic powder
 - 1 bay leaf
 - Optional: 1 cup spinach or kale
 - Optional: 1 teaspoon Italian seasoning
 
Instructions
- In a large pot over medium-high heat, cook the ground beef until browned. Drain excess grease.
 - Stir in the onion, carrots, celery, and green beans. Cook for about 5–7 minutes until slightly softened.
 - Pour in the diced tomatoes with juice and water. Add salt, pepper, garlic powder, and bay leaf. Stir well.
 - Bring the mixture to a boil, then reduce the heat. Let it simmer for 30–40 minutes, stirring occasionally.
 - If using, stir in the spinach or kale during the last 5 minutes of cooking.
 - Remove the bay leaf. Adjust seasoning if needed and serve hot with bread or salad.
 
Notes
Use fresh vegetables for better flavor. This soup can be made in a slow cooker for convenience.
