Description

A comforting and delicious casserole with a cheesy sauce, spaghetti, and tender chicken that’s perfect for family gatherings.


Ingredients

  • 8 oz Spaghetti (use whole grain for extra fiber)
  • 2 cups Rotisserie Chicken, shredded
  • 2 cans Cream of Chicken Soup (can substitute with homemade white sauce)
  • 1 can Diced Tomatoes with Green Chiles (adds a spicy kick)
  • 3 cups Shredded Cheddar Cheese (more cheese means more deliciousness!)
  • 1 cup Onion and Bell Pepper, chopped (can be cooked with butter for flavor)
  • 1 cup Milk or Chicken Broth (to adjust sauce consistency)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt butter in a pan, then add chopped onions and bell pepper. Cook over medium heat until softened.
  3. Add shredded rotisserie chicken, creamy soup, diced tomatoes, and shredded cheddar. Stir in milk or chicken broth until smooth and bubbling.
  4. Cook spaghetti until al dente, then mix it with the creamy sauce.
  5. Pour the mixture into a casserole dish, top with extra cheddar and paprika, and optionally add crunched crackers or crispy fried onions.
  6. Bake uncovered for 25-30 minutes or until bubbling and cheese is melted.
  7. Let cool slightly before serving.

Notes

This casserole can be assembled ahead of time and stored in the fridge. It also freezes well in slices for easy meals later.
