Ingredients
- 8 oz Spaghetti (use whole grain for extra fiber)
- 2 cups Rotisserie Chicken, shredded
- 2 cans Cream of Chicken Soup (can substitute with homemade white sauce)
- 1 can Diced Tomatoes with Green Chiles (adds a spicy kick)
- 3 cups Shredded Cheddar Cheese (more cheese means more deliciousness!)
- 1 cup Onion and Bell Pepper, chopped (can be cooked with butter for flavor)
- 1 cup Milk or Chicken Broth (to adjust sauce consistency)
Instructions
- Preheat the oven to 350°F (175°C).
- Melt butter in a pan, then add chopped onions and bell pepper. Cook over medium heat until softened.
- Add shredded rotisserie chicken, creamy soup, diced tomatoes, and shredded cheddar. Stir in milk or chicken broth until smooth and bubbling.
- Cook spaghetti until al dente, then mix it with the creamy sauce.
- Pour the mixture into a casserole dish, top with extra cheddar and paprika, and optionally add crunched crackers or crispy fried onions.
- Bake uncovered for 25-30 minutes or until bubbling and cheese is melted.
- Let cool slightly before serving.
Notes
This casserole can be assembled ahead of time and stored in the fridge. It also freezes well in slices for easy meals later.
