Ingredients
- 24 chocolate sandwich cookies, crushed
- 8 oz cream cheese, softened
- 12 oz semi-sweet chocolate chips, melted
- ¼ cup white candy melts, melted
- Candy eyeballs
- Assorted sprinkles or colored gel (optional)
Instructions
- Crush the chocolate cookies into fine crumbs using a food processor or a plastic bag with a rolling pin.
- In a bowl, mix the cookie crumbs and softened cream cheese until a dough forms.
- Roll the mixture into balls, about 1 inch in size, and place them on a baking sheet.
- Chill the balls in the refrigerator for 20 to 25 minutes to firm up.
- Dip each truffle into the melted semi-sweet chocolate, coating it completely.
- Before the chocolate sets, add candy eyeballs and any additional decorations or sprinkles you like.
- Chill the truffles again until they are firm, ready to serve with flair!

Store in an airtight container in the refrigerator for up to a week. For a smoother coating, let the melted chocolate cool slightly before dipping.
