Description

A comforting and flavorful egg curry, rich in spices and perfect for weeknight dinners.


Ingredients

  • 4 large eggs
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tomatoes, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander for garnish
  • Lime wedges for serving


Instructions

  1. Boil the eggs to your desired consistency (hard-boiled is traditional).
  2. In a pan, heat oil and sauté onions, garlic, and ginger until fragrant.
  3. Add chopped tomatoes and the spice blend (cumin, coriander, turmeric, garam masala) and simmer.
  4. Once the sauce thickens, gently add the boiled eggs, allowing them to absorb the flavors.
  5. Serve hot with rice or rotis, garnished with coriander and lime.

Notes

For spicier curry, add green chilies or red pepper flakes; for a vegetarian version, substitute eggs with paneer.
