A creamy and cheesy spaghetti carbonara dish that’s quick to make and perfect for cozy evenings.
Ingredients
- 12 oz spaghetti
- 4 oz pancetta, diced
- 3 large eggs
- 1 cup grated Pecorino Romano cheese
- Fresh black pepper, to taste
- Salt, for water
- Pasta cooking water, reserved
Instructions
- Boil a large pot of salted water and cook spaghetti until al dente.
- In a skillet, cook the pancetta until crispy and golden.
- Whisk together eggs, Pecorino Romano cheese, and black pepper in a separate bowl.
- Once pasta is ready, reserve some cooking water and toss spaghetti with pancetta in the skillet.
- Remove skillet from heat, and quickly blend in the egg mixture, using pasta water for desired creaminess.
Notes
Use quality ingredients for best results. Don’t overcook the pasta, and always combine the egg mixture off the heat to avoid scrambling.
