Ingredients

  • 1 cup Biscoff Cookie Butter
  • 1 cup Mascarpone Cheese
  • 1 cup Heavy Cream
  • 1/4 cup Sugar
  • 16 Biscoff Cookies
  • 1 cup Coffee
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 2 tablespoons Cocoa Powder


Instructions

  1. In a mixing bowl, combine the Biscoff cookie butter and mascarpone cheese. Mix until smooth.
  2. In a separate bowl, whip the heavy cream with sugar, vanilla extract, and a pinch of salt until stiff peaks form.
  3. Gently fold the whipped cream into the Biscoff mixture until well combined.
  4. Brew your coffee and let it cool slightly.
  5. Quickly dip each Biscoff cookie in the coffee, ensuring they are soaked but not soggy.
  6. Arrange half of the soaked cookies in a serving dish.
  7. Spread half of the Biscoff cream mixture over the cookies.
  8. Repeat with another layer of soaked cookies and the remaining cream.
  9. Dust the top with cocoa powder.
  10. Chill for at least 1 hour before serving to let the flavors meld.
