- 1 cup Biscoff Cookie Butter
- 1 cup Mascarpone Cheese
- 1 cup Heavy Cream
- 1/4 cup Sugar
- 16 Biscoff Cookies
- 1 cup Coffee
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- 2 tablespoons Cocoa Powder
Instructions
- In a mixing bowl, combine the Biscoff cookie butter and mascarpone cheese. Mix until smooth.
- In a separate bowl, whip the heavy cream with sugar, vanilla extract, and a pinch of salt until stiff peaks form.
- Gently fold the whipped cream into the Biscoff mixture until well combined.
- Brew your coffee and let it cool slightly.
- Quickly dip each Biscoff cookie in the coffee, ensuring they are soaked but not soggy.
- Arrange half of the soaked cookies in a serving dish.
- Spread half of the Biscoff cream mixture over the cookies.
- Repeat with another layer of soaked cookies and the remaining cream.
- Dust the top with cocoa powder.
