California Roll Sushi Bowls bring the delightful flavors of sushi into an easy, deconstructed format. A quick and satisfying way to enjoy sushi rice, fresh vegetables, and flavorful toppings.
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1 avocado, sliced
- 1 cucumber, sliced
- 8 oz crab meat (or substitute with tofu for vegan option)
- 2 tablespoons soy sauce (or gluten-free tamari)
- 1 tablespoon sesame seeds
- 1 tablespoon lemon juice
- Furikake (optional)
- Spicy mayo (optional)
Instructions
- Rinse sushi rice until water runs clear, then combine with water in a pot and bring to a boil.
- Reduce heat and simmer for 15 minutes, then let rest off heat for 10 minutes.
- While rice is cooking, prepare the avocado, cucumber, and crab.
- Once rice has cooled slightly, assemble bowls with rice at the bottom, then layer avocado, cucumber, and crab on top.
- Sprinkle sesame seeds and drizzle with soy sauce or spicy mayo before serving.
Notes
Assemble bowls just before serving to keep ingredients fresh. Refrigerate leftovers for up to 2 days.
