Description

California Roll Sushi Bowls bring the delightful flavors of sushi into an easy, deconstructed format. A quick and satisfying way to enjoy sushi rice, fresh vegetables, and flavorful toppings.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 8 oz crab meat (or substitute with tofu for vegan option)
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon sesame seeds
  • 1 tablespoon lemon juice
  • Furikake (optional)
  • Spicy mayo (optional)


Instructions

  1. Rinse sushi rice until water runs clear, then combine with water in a pot and bring to a boil.
  2. Reduce heat and simmer for 15 minutes, then let rest off heat for 10 minutes.
  3. While rice is cooking, prepare the avocado, cucumber, and crab.
  4. Once rice has cooled slightly, assemble bowls with rice at the bottom, then layer avocado, cucumber, and crab on top.
  5. Sprinkle sesame seeds and drizzle with soy sauce or spicy mayo before serving.

Notes

Assemble bowls just before serving to keep ingredients fresh. Refrigerate leftovers for up to 2 days.
