A simple and comforting recipe for tender chicken dumplings made in one pot, perfect for cozy nights.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup water
- 1 lb boneless chicken thighs, chopped
- 1 tbsp fresh ginger, grated
- 3 green onions, finely chopped
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 4 cups chicken broth
- 1 tsp whole peppercorns
Instructions
- In a bowl, mix the flour and water until you form a smooth dough. Knead for about 5 minutes until the dough is elastic. Let it rest under a damp cloth for 30 minutes.
- In another bowl, combine the chopped chicken thighs, ginger, green onions, soy sauce, and sesame oil. Mix until everything is well combined.
- Divide the rested dough into equal portions. Roll each piece out thinly to about 1/8 inch thick.
- Place one tablespoon of the chicken filling in the center of each dough circle. Fold over to create half-moons and seal the edges tightly.
- Bring the chicken broth to a gentle boil. Drop in the dumplings and cook until they float, which takes about 5-7 minutes.
Notes
Make sure the dough is not too sticky; adjust with a little more flour if needed. You can customize the filling by adding chopped vegetables or using different proteins.
