Description

A fresh and zesty side dish perfect for pairing with grilled meats, tacos, or as a flavorful base for bowls.

Ingredients

  • 1 cup Long-Grain White Rice
  • 2 cups Water
  • 1/2 cup Fresh Cilantro, finely chopped
  • 1 Fresh Lime, juiced
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil

Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice, water, and salt. Stir gently to combine.
  3. Bring the mixture to a rolling boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes without lifting the lid.
  5. After cooking, remove from heat and let it sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork and drizzle with olive oil, tossing gently to combine.
  7. Add the chopped cilantro and lime juice, stirring well to combine.
  8. Taste and adjust seasoning if necessary, then serve warm.

Notes

Rinse the rice thoroughly to remove excess starch. Adjust lime juice and salt according to personal taste. For a twist, add diced tomatoes or black beans.
