Description

A warming veggie soup packed with fresh vegetables, herbs, and spices, perfect for chilly days.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh herbs (thyme, parsley), for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and garlic, sauté until translucent.
  3. Add carrots, celery, and bell pepper, cooking until softened.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Season with salt and pepper, then let simmer until vegetables are tender, about 20 minutes.
  6. Serve hot, garnished with fresh herbs.
