Description
A warming veggie soup packed with fresh vegetables, herbs, and spices, perfect for chilly days.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh herbs (thyme, parsley), for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and garlic, sauté until translucent.
- Add carrots, celery, and bell pepper, cooking until softened.
- Pour in the vegetable broth and bring to a simmer.
- Season with salt and pepper, then let simmer until vegetables are tender, about 20 minutes.
- Serve hot, garnished with fresh herbs.
