Description

A delicious and effortless weeknight dinner that combines chicken and orzo in a tangy balsamic sauce, all cooked in one pan.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, etc.)
  • 1/2 cup balsamic vinegar
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh oregano (or 1/2 tsp dried)
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken with salt and pepper, then brown in the skillet until golden, about 5-7 minutes.
  3. Add the orzo and mixed vegetables to the skillet.
  4. Pour in the balsamic vinegar and chicken broth.
  5. Stir well, bring to a simmer, cover, and cook for about 15 minutes, stirring occasionally, until orzo is al dente.
  6. Adjust liquid if necessary and allow to rest for a few minutes before serving.

Notes

Serve with a side salad and crusty bread. For added flavor, drench with balsamic reduction before serving.
