Description
A delicious and effortless weeknight dinner that combines chicken and orzo in a tangy balsamic sauce, all cooked in one pan.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups mixed vegetables (bell peppers, zucchini, etc.)
- 1/2 cup balsamic vinegar
- 2 cups chicken broth
- 2 tbsp olive oil
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh oregano (or 1/2 tsp dried)
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken with salt and pepper, then brown in the skillet until golden, about 5-7 minutes.
- Add the orzo and mixed vegetables to the skillet.
- Pour in the balsamic vinegar and chicken broth.
- Stir well, bring to a simmer, cover, and cook for about 15 minutes, stirring occasionally, until orzo is al dente.
- Adjust liquid if necessary and allow to rest for a few minutes before serving.
Notes
Serve with a side salad and crusty bread. For added flavor, drench with balsamic reduction before serving.
