Description

A comforting one-pot beef stew packed with flavor, perfect for family dinners.


Ingredients

  • 2 pounds Beef Chuck Roast (cut into 1-inch cubes)
  • 4 medium Carrots (peeled and diced)
  • 3 medium Potatoes (cut into bite-sized pieces)
  • 1 large Onion (chopped)
  • 4 cloves Garlic (minced)
  • 4 cups Beef Broth (low-sodium recommended)
  • 2 leaves Bay Leaves
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black Pepper (freshly ground, to taste)
  • 2 tablespoons Olive Oil (for browning the beef)


Instructions

  1. Prepare all ingredients: chop beef, dice vegetables, and mince garlic.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef until browned on all sides.
  3. Remove the browned beef from the pot. Add chopped onions and sauté until translucent. Then add minced garlic.
  4. Return the beef to the pot and add diced carrots, potatoes, beef broth, bay leaves, thyme, salt, and pepper.
  5. Bring the stew to a boil. Once boiling, reduce heat and let it simmer for 1.5 to 2 hours, or until the meat is tender.
  6. Adjust seasoning as needed, remove bay leaves, and serve hot.

Notes

Garnish with fresh herbs like parsley and serve with crusty bread or warm biscuits. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
