Description

These Easy Protein Muffins are a reliable, grab-and-go breakfast or post-workout snack that stay moist and flavorful.


Ingredients

  • 1 cup protein powder
  • 1 cup oats or flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 2 eggs
  • 1/2 cup milk or yogurt
  • 1 ripe mashed banana or 1/4 cup oil
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine dry ingredients: protein powder, oats or flour, baking powder, and salt.
  3. In another bowl, whisk together wet ingredients: eggs, milk or yogurt, mashed banana or oil, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Scoop the batter into a lined or greased 12-cup muffin tin.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before removing from the tin.

Notes

For a crunchy finish, sprinkle oats or a simple streusel on top before baking. You can also substitute with flavored protein powders for different tastes.
