A vibrant, fresh, and flavorful salad packed with colorful vegetables and a zesty lemon dressing.
Ingredients
- 1 cup orzo pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 carrot, shredded
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt, to taste
- Pepper, to taste
Instructions
- Cook orzo in a large pot of boiling salted water until al dente, about 8-10 minutes.
- While orzo cooks, chop the vegetables.
- Once the orzo is done, drain and rinse under cold water.
- Combine the orzo and vegetables in a large bowl.
- Add the olive oil and lemon juice, mixing well.
- Season with salt and pepper to taste.
- Chill in the fridge for at least 30 minutes before serving.
Notes
Add protein like grilled chicken or chickpeas for a heartier main dish. You can also layer it in jars for a fun lunch option.
