Description

A vibrant, fresh, and flavorful salad packed with colorful vegetables and a zesty lemon dressing.


Ingredients

  • 1 cup orzo pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 carrot, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Cook orzo in a large pot of boiling salted water until al dente, about 8-10 minutes.
  2. While orzo cooks, chop the vegetables.
  3. Once the orzo is done, drain and rinse under cold water.
  4. Combine the orzo and vegetables in a large bowl.
  5. Add the olive oil and lemon juice, mixing well.
  6. Season with salt and pepper to taste.
  7. Chill in the fridge for at least 30 minutes before serving.

Notes

Add protein like grilled chicken or chickpeas for a heartier main dish. You can also layer it in jars for a fun lunch option.
