Ingredients
- 1 lb chicken breast, cubed
 - 1/2 cup cashews
 - 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
 - 1/4 cup soy sauce
 - 1 tbsp ginger, minced
 - 2 cloves garlic, minced
 - 1 tbsp olive oil
 - Salt and pepper to taste
 
Instructions
- Marinate the chicken in soy sauce, ginger, and garlic for at least 15 minutes.
 - Preheat the oven to 400°F (200°C).
 - On a large sheet pan, combine marinated chicken, vegetables, and olive oil; toss to coat.
 - Roast in the oven for 20 minutes.
 - Add cashews halfway through cooking time to prevent burning.
 - Check chicken’s internal temperature; it should reach 165°F (74°C) before serving.
 - Serve directly from the sheet pan or transfer to a platter.
 
Notes
For best results, cut vegetables uniformly and avoid overcrowding the sheet pan.
