Description

A delightful meal featuring tender chicken, crunchy cashews, and vibrant vegetables roasted on a single sheet pan for a hassle-free dinner.


Ingredients

  • 1 lb chicken breast, cubed
  • 1/2 cup cashews
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1/4 cup soy sauce
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken in soy sauce, ginger, and garlic for at least 15 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. On a large sheet pan, combine marinated chicken, vegetables, and olive oil; toss to coat.
  4. Roast in the oven for 20 minutes.
  5. Add cashews halfway through cooking time to prevent burning.
  6. Check chicken’s internal temperature; it should reach 165°F (74°C) before serving.
  7. Serve directly from the sheet pan or transfer to a platter.

Notes

For best results, cut vegetables uniformly and avoid overcrowding the sheet pan.
