Description

A comforting and creamy white chicken chili perfect for cozy nights, featuring tender chicken, creamy beans, and a hint of spice.


Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 8 oz cream cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • Fresh cilantro, for garnish
  • Juice of 1 lime


Instructions

  1. Dice the chicken breasts into bite-sized pieces.
  2. Heat oil in a large pot over medium heat; sauté onions and garlic until translucent (about 3 minutes).
  3. Add the diced chicken, cumin, and chili powder; cook until golden brown (5-7 minutes).
  4. Stir in the white beans and chicken broth; mix well.
  5. Lower the heat and add cream cheese; stir until melted (about 3 minutes).
  6. Mix in green chiles and lime juice; let simmer on low heat for about 20 minutes.
  7. Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, season the chicken with salt and pepper before cooking. Adjust spice by adding more chili powder or fresh jalapeños, and add more cream cheese for a creamier texture.
