Description

A refreshing and colorful salad combining spaghetti with vibrant vegetables, perfect for summer picnics or light weeknight dinners.


Ingredients

  • 8 oz spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 bell pepper, chopped
  • 1/2 cup olives, sliced
  • 1/4 cup red onion, chopped
  • 1/4 cup olive oil
  • 2 tbsp vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Boil the spaghetti in salted water until al dente, usually 8-10 minutes.
  2. While the pasta is cooking, chop the vegetables.
  3. Once the pasta is done, drain and rinse under cool water to stop the cooking process.
  4. Toss the cooked spaghetti with the dressing and mix in the chopped vegetables.
  5. Serve in a large bowl, garnished with fresh herbs if desired.

Notes

For best results, keep the dressing separate until serving to maintain the crunch of the vegetables.
