Description
A refreshing and colorful salad combining spaghetti with vibrant vegetables, perfect for summer picnics or light weeknight dinners.
Ingredients
- 8 oz spaghetti
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1 bell pepper, chopped
- 1/2 cup olives, sliced
- 1/4 cup red onion, chopped
- 1/4 cup olive oil
- 2 tbsp vinegar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Boil the spaghetti in salted water until al dente, usually 8-10 minutes.
- While the pasta is cooking, chop the vegetables.
- Once the pasta is done, drain and rinse under cool water to stop the cooking process.
- Toss the cooked spaghetti with the dressing and mix in the chopped vegetables.
- Serve in a large bowl, garnished with fresh herbs if desired.
Notes
For best results, keep the dressing separate until serving to maintain the crunch of the vegetables.
