Delightful blend of festive flavors with soft, spiced cookies and creamy eggnog frosting, perfect for the holiday season.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 egg
- 1 cup powdered sugar
- 1/4 cup eggnog
- Additional cinnamon for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg, mixing until well incorporated.
- In another bowl, combine the flour, cream of tartar, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a cookie scoop, portion out the dough onto the prepared baking sheets.
- Bake for 10 minutes or until the edges are lightly golden. Let cool on the sheets for a few minutes before transferring to wire racks to cool completely.
- While the cookies cool, prepare the frosting by beating the powdered sugar and eggnog into the softened butter until smooth and creamy.
- Once the cookies are completely cool, spread or pipe frosting onto the flat side of half the cookies and sandwich with the other half.
- Dust with additional cinnamon if desired and serve.
Notes
For the best flavor, use freshly grated nutmeg. Dough may be chilled for better consistency.
