Ingredients
- 2-4 medium-large russet or Maris Piper potatoes (300–400 g each)
- 2 tsp oil (1 tsp per potato)
- 1 tsp coarse salt (½ tsp per potato)
Instructions
- Choose evenly sized russet or Maris Piper potatoes.
- Scrub and dry each potato, then prick with a fork 6–8 times.
- Rub each potato with 1 tsp of oil and ½ tsp of coarse salt.
- Place the potatoes on a wire rack set over a baking sheet.
- Bake at 425°F (220°C) for 60–75 minutes until the skin is crisp and a skewer slides in easily.
- For a faster option, microwave for 6–8 minutes first, then roast at 425°F for 15–25 minutes to crisp the skin.
Notes
Ensure that the potatoes are dry after washing for maximum crispness. Use a wire rack to allow air circulation for even cooking.
