Description
A delightful and cozy autumn breakfast featuring thick slices of bread soaked in a rich pumpkin mixture, served with your favorite toppings.
Ingredients
- 6 thick slices of bread (brioche or Texas toast)
 - 1/2 cup pumpkin purée (not pumpkin pie mix)
 - 4 large eggs
 - 1 cup milk (dairy or unsweetened almond milk)
 - 1 tsp vanilla extract
 - 1 tsp ground cinnamon
 - 1/4 tsp ground nutmeg
 - 1/4 tsp ground ginger (optional)
 - Pinch of salt
 - Butter or oil for the skillet
 - Maple syrup or sugar-free syrup, for serving
 - Optional toppings: powdered sugar, whipped cream, pecans, pumpkin seeds
 
Instructions
- In a large bowl, whisk together the eggs, milk, pumpkin purée, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
 - Dip each slice of bread into the pumpkin mixture for 15–20 seconds on each side, making sure they are well coated but not soggy.
 - Heat a non-stick skillet or griddle over medium heat, adding butter or oil.
 - Cook the soaked slices for 3–4 minutes per side, until they are golden brown and set.
 - Plate warm and drizzle with maple syrup. Top with whipped cream, toasted pecans, or a sprinkle of cinnamon sugar if desired.
 
Notes
Serve hot with your favorite syrup and toppings; pairs lovingly with coffee or hot chocolate. Store in an airtight container for up to three days.
