Description

A delightful and cozy autumn breakfast featuring thick slices of bread soaked in a rich pumpkin mixture, served with your favorite toppings.


Ingredients

  • 6 thick slices of bread (brioche or Texas toast)
  • 1/2 cup pumpkin purée (not pumpkin pie mix)
  • 4 large eggs
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger (optional)
  • Pinch of salt
  • Butter or oil for the skillet
  • Maple syrup or sugar-free syrup, for serving
  • Optional toppings: powdered sugar, whipped cream, pecans, pumpkin seeds


Instructions

  1. In a large bowl, whisk together the eggs, milk, pumpkin purée, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  2. Dip each slice of bread into the pumpkin mixture for 15–20 seconds on each side, making sure they are well coated but not soggy.
  3. Heat a non-stick skillet or griddle over medium heat, adding butter or oil.
  4. Cook the soaked slices for 3–4 minutes per side, until they are golden brown and set.
  5. Plate warm and drizzle with maple syrup. Top with whipped cream, toasted pecans, or a sprinkle of cinnamon sugar if desired.

Notes

Serve hot with your favorite syrup and toppings; pairs lovingly with coffee or hot chocolate. Store in an airtight container for up to three days.
