Description
A delightful Indian snack made with flaky pastry and sweet banana flavor, perfect for festive occasions.
Ingredients
- 2 cups Cake Wheat Flour/All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 cup Butter (or margarine for dairy-free)
- 1 cup Ice Water
- 1 tablespoon Lemon Juice
- 2 cups Vegetable Oil (or any neutral oil)
- 1 cup Water
- 1 cup Granulated Sugar (or brown sugar for richer flavor)
- 1 teaspoon Ground Cardamom
- 1 teaspoon Rose Essence (or vanilla extract)
- 1/4 cup Melted Butter (or coconut oil)
- 2 tablespoons Cornflour
- 1 teaspoon Red Food Coloring (optional)
- 1/2 cup Pistachios or Almonds (or any preferred nuts)
Instructions
- In a large mixing bowl, combine the flour, baking powder, and cornflour. Mix well.
- Add the butter into the flour mix and rub it in with your fingers until it resembles breadcrumbs.
- Pour in the ice water and lemon juice. Mix until a dough forms, adding more flour if too sticky.
- Cover the dough with a cloth and let it rest for about 30 minutes.
- In a separate bowl, blend the granulated sugar, water, ground cardamom, rose essence, and red food coloring (if using) to make the sugar syrup.
- After resting the dough, divide it into small balls. Roll each ball out into thin puris.
- Heat the vegetable oil in a deep pan. Once hot, fry the puris one at a time until they puff up and turn golden brown.
- Remove the puris and drain on paper towels to absorb excess oil.
- Dip each puri in the sugar syrup immediately for a sweet coating.
- Garnish with chopped pistachios or almonds.
Notes
For a more pronounced banana flavor, you can add mashed banana to the dough. Ensure to use cold water for flakiness and don’t skip the resting time.
