Ingredients

  • 4 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 3 large eggs
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (dill or parsley), chopped
  • Salt and pepper to taste
  • Olive oil for sautéing
  • 1 cup all-purpose flour (or gluten-free alternative)


Instructions

  1. Sauté spinach with minced garlic in olive oil until wilted. Squeeze out excess moisture.
  2. In a mixing bowl, combine sautéed spinach, feta, eggs, fresh herbs, flour, salt, and pepper.
  3. Pour the mixture into a greased baking dish.
  4. Bake at 350°F (175°C) until set and golden, about 30 minutes.
  5. Let cool for a few minutes before slicing and serving.
